Menu Monday

WHITE ENCHILADAS
About 10 flour tortillas
2 cups shredded Jack cheese
2 cups cooked chicken
1/2 onion, diced
3 Tbs. butter
3 Tbs. flour
1 can chicken broth
1 cup sour cream
1 can diced green chilies (7 oz.)

Mix together 1 cup of the cheese, the chicken and the onion. Put some of this mixture into each tortilla, roll and place seam side down in a 9x13 casserole dish.

In a skillet, melt the butter. Stir in the flour and cook for a minute. Add the chicken broth, whisking till smooth. Cook this over medium heat unto it thickens and bubbles. Stir in the sour cream and green chilies. Pour over the top of the enchiladas. Top with the remaining cheese and bake at 425 degrees for 20-25 minutes. ( www.eatathomecooks.com )

Our family loves these enchiladas and they are easy to make. I usually cook and shred a big batch of chicken up so that I can make some other dishes to freeze for later.

*CROCKED BARBECUED BEEF
2 lbs. chuck roast, boneless and trimmed of all visible fat
Salt and Pepper to taste
1 1/2 cups ketchup
1/8 cup honey
1/4 cup balsamic vinegar
2 tablespoons Dijon mustard
1/4 cup barbecue sauce
2 tablespoons Worcestershire sauce
1 teaspoon garlic powder

In a Crock-Pot, place chuck roast. Salt and pepper it to your personal taste.
In a large bowl, mix the rest of the ingredients until well blended. Pour on top of the roast, cover, and cook on low for 8-10 hours.
Remove roast from Crock-Pot and shred meat with a fork. Return meat to Crock-Pot, stirring well to coat evenly with the sauce. Cook for another hour and serve.

Menu Monday, 365 Project

These are from my 365 project, day three, which of course was yesterday. I did not have a chance to post them yesterday. We enjoyed a wonderful day of worship with a great group of Christians! After morning service, we headed out to do a little shopping. My oldest son mainly received money for Christmas this year, so he was ready to check out some clothes shopping. We first headed to Old Navy. He found some jeans and shorts there. Next we headed to the mall, which was very crowded! He did find a few things at American Eagle. It was nice to just look around and see what clearance finds were out there.
He was able to pick up some new clothes, which was nice. It was really cold out yesterday, so I was glad to get back in the warmth and comfort of home.
It was great to be able to spend this time with him, as he goes back to college next week. It has been wonderful to have everyone home, enjoying movies and board games together. This Christmas season has been a fantastic one, mainly because we were all able to enjoy it together and because we had some great times with extended family.
Today, I hope to get alot of cleaning and organizing accomplished. I need to run to CVS and pick up a couple of items. I have a $5.00 off $25.00 coupon that expires today, so I want to make good use of that! They are having a cosmetics sale that I would like to take advantage of.
Tomorrow we "formally" start back to school. Learning, in my opinion, never "stops". But, our regular school routine will begin again! I feel we are all refreshed and ready to go.

Menu Monday

Happy Monday! What a marvelous weekend we enjoyed. Our family had our movie night Friday night, with Star Trek being the movie of the night. I have to say I enjoyed it. I didn't watch alot of Star Trek growing up, but my husband certainly did. On Saturday my hubby and my boys worked at their grandmother's house blowing leaves and cleaning the yard up. I stayed at home to clean house and get grocery list and menus together for the upcoming week. We ended Saturday night watching our favorite football games.


Yesterday, we enjoyed a wonderful day of worship with our oldest son in Atlanta. After a great meal at The Olive Garden, we headed home to prepare for the upcoming week and to rest!! My middle son and myself are headed out this morning to volunteer at Life Care Center. We will be packing boxes for Operation Christmas Child. Later today I hope to continue on with that housecleaning!! We are taking this week off from school to prepare for Thanksgiving. My oldest son will be home for a few days and I want to thoroughly enjoy that time with him. This week we will also be putting up our Christmas lights and decorations. So much fun!! We always do this the day after Thanksgiving. I just love this week!!

Menu Monday

We had a wet weekend, which is good. We can always use the rain! I was able to pull out some of my autumn decorations. I still need to do some yard work and get things looking more like autumn outside. I also still have to finish the painting downstairs. So, those things along with our schoolwork will be on the agenda for this week.

Menu Monday

We had a wonderful weekend and an even better Lord's Day yesterday! Saturday, the boys had friends over and my husband worked at his mother's in the morning, so I tried to get a few things accomplished. I did get some ironing and some cleaning done. I am thinking about planting a fall garden. I need to get on that, if that's the plan. I have not planted a fall garden before, so this will be an adventure! This weekend I plan to put up my summer decorations and get out the "applish" decorations. We have had a couple of cool nights, which was refreshing.

It seems that since we started school, things have been going at lightning speed! I have fell behind in a weekly menu, even though this is when I need that direction the most! Anyway, I think I am back on track, so the menu for this week is as follows:

Menu Monday

What a wonderful weekend it was! Georgia Tech held their Freshman Convocation yesterday, so we picked my son up for church, then went out to eat. We had a wonderful visit. After we dropped him off at his dorm, we went to a parent's reception, then on to the convocation. It was a lovely ceremony, encouraging the freshman class on their new college careers.
The band was just awesome! We enjoyed hearing them play several songs.

We were also entertained by the Glee Club. How talented these men are! By the way, that is "Buzz" leading them!














A picture of some of the freshman wearing their R.A.T.S caps ( Recently Acquired Tech Student). I so much enjoyed this ceremony. It was very moving, uplifting, and encouraging.



On Saturday we met some friends to go to the local arcade. We had so much fun! We rode the go-carts with the boys, then went inside and visited while the boys played video games.























It was a very nice evening with friends! We enjoyed the time to get caught up with them.
I will post my weekly menu tomorrow. I have not written it out yet. We are in full force on school this week. I wish everyone a wonderful Monday!

Menu Monday/Youth Group Camping

This past Friday night, the youth group from church went camping. They had a super turn out of youth and adults! Two of my boys went and had a great time. A couple of years ago, we bought some cots for our camping adventures. They have turned out to be very handy!

They had water gun fights, went hiking, swimming, and ate lots of great food! The boys were tired when we picked them up, but boy had they had fun!!
We have lots to do this week with school, housework, yard work, and getting my oldest off to college! I love this feeling of getting ready for autumn! At the end of this month, I plan to get out my autumn decorations and "fallish smelling" candles! It will be time to visit the apple orchards and enjoy cider, camping, and sitting around a cozy fire! Gotta love it!

Weekly Menu

My computer has been down for about half a week now. Hopefully we will be able to get it back in working order in the next few days. I am using my son's computer to get caught up on here. I miss not being able to blog and read other blogs!

Yesterday, we visited another church in Atlanta. This visit was much different from the previous week. This church seemed to be very solid and oh, so joyful! They were celebrating their 50th homecoming and what a service they had! I felt very uplifted when we left. They had a dinner after services, so we stayed and had a great time.

We are back on school schedule now. Today is the first day of the new school year for my middle and youngest son. I love new beginnings! New notebooks, classes, field trips!! We do a half schedule this week and then go into our full schedule next week. It seems to work well for us that way. We have an honor society meeting this afternoon to start the new school year. We are meeting at a place where they serve yummy smoothies. Can't wait for that!!

Monday's Menu

Our week began yesterday in Atlanta searching for a church home for my college-bound son. I was a little discouraged, as it seems this search may take longer than what I thought, but after much prayer I feel better. We visited a congregation yesterday that does much good for the community, but seemed to be lacking in their biblical soundness. Once again, I learned that I need to spend alot of time on my knees and let God do the leading. So, after much prayer, I am ready to head out next Lord's Day to continue this search. This week there is alot of "projects" that need to get finished. Hopefully I will be able to "plan my work and work my plan". We will be starting school in about two weeks and I would like to have these things completed. Today includes the usual laundry, cleaning the bathrooms, cleaning the kitchen, and doing some work in the yard. One of my "big" projects includes finishing all painting that needs to be done. I need to go this afternoon to get some more supplies to do this. I hope to paint on Wednesday, then get the rooms back in order on Thursday. I also need to put the finishing touches on getting our school supplies in order and ready for use. Then, Friday night, is the homeschool Shakespeare play. I am looking forward to attending this as many of our friends are in the play. The mom who leads this does such an outstanding job!

Menu Monday


What a wonderful weekend we had. The weather has turned a little cooler and it feels great! On Friday night, we had our usual movie and pizza night, then on Saturday we started the day with chores, moved on to errands, and finished the day going to see the new Harry Potter movie. We all enjoyed the movie. We don't go to the theater alot, so it is a treat when we do.
Our week started yesterday with worship and fellowship. The lesson was basically on are we just doing the minimal or going beyond that in our Christian lives. I started thinking about that. Do I give myself FULLY to Christ or do I give "just enough" to get by? What was interesting is that later in the afternoon I was researching a church online that would be near my oldest son's college. One of the messages that kept coming across on their website was giving oneself fully to Christ. We are going to visit that church this coming week, as we are trying to find a solid church family for my son while he is in college. They have a ministry to the college that he will be attending. I would appreciate prayers that my son finds a solid, bible believing group of Christians to worship with while he is away.
I wanted to share our menu this week. I haven't done that in awhile. I do much better with a written menu plan than trying to wing it each night. Sometimes the menu gets moved from one day to another, but just having the plan in place helps greatly.

Weekly Menu, Upcoming activities

What a wonderful weekend we had! We had a yard sale on Friday and Saturday. On Saturday we went to a family reunion and visited with family members we haven't seen in a while. Then, we started our week in worship with other believers. The message that was preached was one that I needed. The lesson dealt with hiding God's word in your heart, studying and knowing God's word. I needed this boost to really dig down deep and commit to memory God's word and to make sure that we don't let other activities take precedence over the study of God's word in our home. The fellowship was also very encouraging. What a great way to start the week!

Menu Monday

What a wonderful weekend. Saturday, my oldest son had his Senior piano recital and graduation reception. I will be sharing pictures of this in tomorrow's post. It was a very special event with family and friends. We enjoyed the fellowship and the music. Yesterday, we had another wonderful day of worship. Last night was the wrap up of our PEP groups (small group study) . We break with these groups through the summer, then re-start with new groups in the fall. Last night was an all group meeting at one of our family's homes. I wasn't feeling very well , so I did not get to attend, but Mike and the boys went. They had a great time of study and fellowship. These groups are such a nice way to really get to know other church members on a more personal level.

Menu Monday

I hope everyone had a wonderful day of worship and a Happy Mother's Day. We spent some time together as a family, then headed off to visit my dad and mom. We then headed to my mother-in-law's to eat supper with her. It was a very nice day!

On Saturday night we spent time visiting family at my niece and nephew's birthday party. Despite the rain, we had a great cook-out. It was nice to see my sister-in-law's family. Her side of the family was celebrating some birthdays, so we actually ended up celebrating about four birthdays in all. What a nice evening!

Menu Monday

We had the best weekend! On Saturday, Clint had a piano event at The University of Tennessee at Chattanooga. The event was held at Cadek Hall on the UTC campus. He had to play some pieces to be graded by a judge. We could not go in the room;however, we could stand right outside and hear him play. This year he moved up a level and so the judging was a bit harder. He did a great job, although I think he is glad it is over!

On Saturday night, we enjoyed a wonderful get together with Mike's side of the family. It was great to see relatives that we don't get to see often. We visited , ate delicious finger foods, and watched a couple of old home movies. How fun!!
Planning is in gear for a swim party reunion this summer!

This week began with an amazing worship service! I feel so refreshed and energized to live for God. Our little church has had its share of struggles the last few years and has actually not had much formal leadership. Well, yesterday we installed new elders. The service for this was such an important one for the new elders and the congregation alike. I pray for these men and their families as they take on this big responsibility. I also want to strengthen my resolve in the Sunday school class that I teach. We had a wonderful dinner after service, then had open discussion with the new elders. Now, to get to the work of spreading the gospel!

Menu Monday

What a wonderful day of worship yesterday! We had our 5th Sunday dinner after morning services. This is such a great time to fellowship and there is always so much food. Our church host an annual Easter egg hunt which we are preparing for. Last year we were out of town and did not get to attend, but this year the boys will be able to help with the activities.

At home we are preparing for Easter dinner, my oldest son's birthday, and an egg hunt for the little ones. What a day that will be! We are going to have Easter dinner for both sides of the family. My oldest son's birthday is on Easter this year, so we will have cake and celebrations for him also. Then we want to have an egg hunt for the little ones. I think it will be alot of fun!

We had a great weekend around our house. The weather was a bit crazy. Saturday was windy with rain. We thought we might get snow on Sunday, but it went around us and headed further south. On Saturday, Mike and the boys worked on my car, then we headed out to some of the boys' activities. Clint and Chase went to Dicehead games for some war gaming. All of my boys really enjoy this. While they were doing this, Mike and I spent some one on one with my middle son. We went to the Barnes & Noble at the mall. It was very crowded. We got a little snack there and then headed to pick the other boys up. When we got back home, we watched the movie King Arthur together. All in all, it was a very nice day.


On Sunday, we had an encouraging day of worship. I started my teaching rotation with the 1st and 2nd grade class. What a sweet group they are! The afternoon was spent still trying to fix my car. I think we are almost there in having it completely fixed. Yeah!


Are we ever ready for some spring weather around here! I will be posting my spring cleaning schedule later this week. I plan on starting some deep spring cleaning next week. I can't wait to put out spring decorations. I am also anxious to start some yard work. So much to do!
